1 Cut each piece of chicken lengthwise into three thick strips. Chop the onion and dice the peppers. Heat the oil in a large covered frying pan and cook the chicken for 3 minutes over medium heat or until browned and partly cooked. Transfer the chicken to a plate.

2 Fry the onion, peppers, and garlic for 5 minutes over a medium heat, stirring until slightly softened. Return the chicken to the pan with any juices and sprinkle in the rice. Add the hot stock, then pour in the tomatoes. Return to a boil over a high heat. Stir, cover, and simmer for 15 minutes, or until the rice is tender, stirring occasionally to prevent the rice from sticking to the bottom of the pan.
